Raw fish is often how we begin: the fish crudité with red prawns, the bluefin tuna and swordfish carpaccio with avocado and cherry tomatoes, carasau bread with raw fish and bottarga.
All the fish we serve raw is blast chilled, as Italian rules require for fish eaten raw. Which fish reaches the plate changes with the market.

A closer look

Blast chilled, as the rule says
Blast chilling is the step that makes fish suitable to eat raw. With us it applies to all raw fish, with no exceptions. If you have doubts or an allergy, ask the staff.
With bread and with bottarga
Raw fish goes well with a thin bread: carasau or guttiau, with a little bottarga. See also bluefin tuna and red prawns.
